Kippered Salmon
Kippered salmon is cured in a specially seasoned brine, then heat and hardwood smoked. This process fully cooks the fish, making it tender and flaky and produces a succulent, mild taste. This process takes 3 to 5 days, 10-lb. minimum. $4.95 per lb. on the incoming weight and includes vacuum packing in 1 or 2 lb. packages.

This time-honored method of curing, smoking, and drying salmon produces an energy-rich, traditional Alaskan trail food that can be enjoyed as a snack anytime. This process takes 10 days, 10-lb. minimum. $6.45 per lb. on the incoming weight and includes vacuum packing in 1 or 2 lb packages.
